Avocado and English Muffin Omelet Cup

yes, you read that right. i was hungry and somewhat hungover this morning, but still felt the urge to make something semi-fancy for breakfast.

i thought, simple, nutritious, and delicious.

now, to preface this, i love avocados. like, REALLY love avocados, which is surprising, because as a child, i had a strange aversion to guacamole, but now i absolutely love the stuff (that’s another post!)

so without further ado, here’s how i created this delicious and easy morning feast:

PREP TIME: 10min

BAKE TIME: 20min

step 1: preheat over and gather ingredients!

obviously, for an omelet you need eggs. here i have taken 3 large eggs. also, with this being an omelet, you can change up the ingredients how you like them. i choose onions and shredded cheese for my bits. the avocado i insert later (you will see). also, i preheated the over to about 275. but you can give or take the temp regarding time and altitude. i’m not really sure how eggs normally cook in an oven, i’m just hungry and know how to not burn some things.

as you can see, i’ve stirred together the onions, eggs, and shredded cheese before moving on to the next step.

step 2: greasing the pan and pouring!

muffin pans are fantastic for many things!

these ingredients were enough for 6 cups, but of course you can alternate the ingredients (eggs, and other stuff), to make more or less depending on how many you want. at this step, i also added a little bit of shredded cheese in each cup and added a little salt and pepper to taste.

step 3: add avocado and english muffins!

here, i sliced avocado and an english muffin (very lightly buttered) into strips to fit into each cup.

and then you shove it in the oven…

step 4: bake, remove, and serve!

i played around the temp while i was doing this. i started out at 250 for 15 min, then boosted to 300 for another 5 min… so i just thought maybe 275 for 20min *may* be a healthy medium, again try it for yourself and find a happy medium.

but as you can see, mine turned out fine (i used a silicon spatula thing (i guess for mixing stuff) to get these out).

FANCY AND DELICIOUS!!

and i know a lot of people are probably wondering why i didn’t put bacon in this (since i put it in almost everything else), but that was because i was actually OUT (gasp) of bacon, since i made bacon stir-fry the night before (and used over a half pound of bacon in it (but that’s another post)!).

    on a side note, when i greased the cups for this, i used a mixture of crisco and bacon grease, but i’m sure you can do what you want for that step!
